As many of you can see, I’m making efforts to become more “domestic”   I used to not cook at all, but since we’ve moved into our new house, I have done much better.
I want to step it up a notch this summer and be creative with more than just my photography.  I’m hoping to post once a week with a new Summer Fun Recipe.
Here is my first attempt….and it’s sort of cheating b/c there is no cooking involved.
This is actually Brandi’s recipe that she brought back from Dallas.
I ask her to make it at least once a week.  It is sooo fresh and yummy.  It’s also really healthy and filling.

Summer Back Bean Salad
2 cans of black beans (drained)
2 cans of corn (drained)
1 can of mild rotel
1 cup grape tomatoes (sliced)
2  limes (squeezed)
2 avocados
1/2 onion (chopped)
chopped cilantro (to taste)
Sliced Jalapenos in their Juice (to taste)
McCormick’s Garlic Pepper (to taste)
Eat it with Tostitos Hint of Lime chips! (This really makes it)

This recipe is super easy….Just put this all in a big bowl and stir!!
