I’ve made it 5 days,yooohooo!
I got on the scale this morning, and I’m only down about 2 lbs, but I’m officially off Diet Cokes, so it’s totally worth it.
(Brandi is down 6 lbs though, and Jill who is doing it with us is down 7 or 8!)
On day 4, I didn’t have any headaches at all. I was really surprised that they stopped that quickly.
I was expecting to battle headaches at least a week.
So far, it’s not been as hard as I expected, but the cleanse is still young
The hardest part about doing this is that we are having to plan ahead anytime we leave the house.
Kelly boy and Posey were out of town a couple of nights ago, so Brandi and I packed up
and had a slumber party at our friend Katie May’s house. We really looked ridiculous showing up
with our cooler of food, but we were determined to stick with it!
A few of the foods that have been getting us through the tough times are, popcorn, hot tea with honey
Raw Almond Butter, our version of a Humphrey Fauxgart(we’ll share this recipe later),
We have been getting really creative in our culinary adventures.
Brandi had the ingenious idea to made coconut shrimp, so we invited the whole family over to eat.
We paired it with Roasted Asparagus, Creamed Cauliflower, and green beans. It was to die for!
Here are the recipes below:
Coconut Shrimp
Ingredients:
Unsweetened all natural Coconut
2 eggs
Honey
Precooked Peeled, De veined Shrimp
Olive Oil
Sauce:
Plain Yogurt
Honey
Lime
Mix the 2 eggs in a bowl and add 3 tbs of honey. Add salt, pepper and garlic seasoning to taste
Put your coconut in a separate dish.
Dip your shrimp, one at a time in the egg mixture, and then coat with the coconut on both sides
Once you have coated all your shrimp, let then chill for at least 30 minutes.
Coat the bottom of your skillet with olive oil, and let it get hot.
Saute your shrimp on each side until golden brown.
For the Sauce, mix 1 cup Plain yogurt, with 4 tbs honey and the juice of one lime.
Use this as a dipping sauce for your shirmp.
Also, you MUST try creamed Cauliflower! It tastes just like mashed potatoes!
Just steam a head of cauliflower, break it up and mash it like you would potatoes.
Then add butter, salt, pepper, and anything thing else you normally add to potatoes.
It will rock your world!
