30 Day Cleanse….Day 1

The good news is I’ve survived my first day without Diet Coke.  The bad news is, I haven’t had any Diet Coke all day.
I’m pretty sure this is the first day in 10 years that I’ve gone without it.  I think the funny part about today is that Brandi
thought it would be a piece of cake to ditch her Diet Coke…..let’s just say, she didn’t realize she was dependent on it as well.
Around 2:00, everything started annoying me….people talking, the phone, the lights in the room, I even started to annoy myself.
It took me a minute to realize that I was having withdrawals.  I pressed through, and I think I’m gonna make it.
Honestly, I’m really glad I decided to blog about this, because I probably would have given in to my cravings around 2:00.
Other than that, the day hasn’t been too bad.  I’ve been so focused on my craving for a DC, that I forgot I wanted chocolate
I went to the park this morning around 10 and walked for about an hour.
It’s so amazing outside, and I want to take advantage of this weather!
I ate an apple for breakfast….yes, just a simple old apple!
It’s crazy how when you actually wait until you are hungry to eat, the food tastes a whole lot better.
When I had my little 2:00 temper tantrum, Brandi decided it would make me feel better to have some popcorn, so she whipped some up.
She made it the old fashioned way, and if you haven’t done that in a while, OMG, you need to.  It was so good.
I think the hardest part about this cleanse is we aren’t eating anything from a can or a package.  We actually made our own salsa today.
It was pretty easy, and it actually tastes good.  I just hope I can keep up my excitement for an entire month.
The best part about this cleanse is that you can have butter   Don’t worry, I’m not going to abuse it, but it sure the heck makes veggies go down a whole lot easier!
I guess that’s all for now.  I hope that maybe this encourages you to take a step towards eating a little healthier this month.

Below I’ll post a recipe for our dinner tonight as well as the salsa concoction we made.  Good luck!

Kelly& Brandi’s sort of salsa
1 onion
1/2 green bell pepper
1/2  red bell pepper
2 jalapenos(to taste)
1/2 cup chopped cilantro
3 cloves chopped garlic
8 large tomatoes(I used about 16 smaller ones)
2 limes(juice only)
1 tbs. Vinegar
Cumin(to taste)
Salt & Pepper(to taste)

I chopped the onion, bellpeppers, jalapenos, cilantro, & garlic, and blended them in a blender until they were the consistency I wanted.
Next, I chopped up the tomatoes and blended them as well, then added the tomatoes to my previous mixture.
Next, I just added my cumin, salt and pepper to taste.
Stir well, and chill until you are ready to serve.

Dinner:
Chicken served over Brown Rice with a Sauted Onions, Peppers and Salsa

You’ll need:
10 chicken tenders
1/2 onion
1/2 bell pepper
Salsa from above
Whole Grain Brown Rice

 

Cook your Chicken in 2 tbs of olive oil.
When it is almost done, add your onion, and bell pepper,
When the chicken is finished cooking,  remove it and allow the onions and bell peppers to cook down a little more.
When they were almost done, add 1/2 cup of the salsa from above and saute for about 5 minutes.

Serve over a bed of brown rice.  I’ll post a photo below.  Good Luck!
